Classic Shepherd’s Pie Recipe

Shepherd’s Pie is a hearty and comforting dish that layers savory ground meat with vegetables and tops it with a blanket of creamy mashed potatoes.

Ingredients

For the Meat & Vegetable Filling

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 pound ground lamb or beef

  • 1 tablespoon tomato paste

  • 1 tablespoon Worcestershire sauce

  • 1/2 cup beef broth

  • 1 cup frozen peas and carrots

  • Salt and pepper, to taste

  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)

For the Mashed Potato Topping

  • 2 pounds russet potatoes, peeled and cut into chunks

  • 1/2 cup milk (warm)

  • 1/4 cup unsalted butter

  • Salt and pepper, to taste

  • Optional: 1/4 cup grated cheddar cheese for topping

Instructions

1. Prepare the mashed potatoes

Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes.

Drain well and return to the pot. Add butter and warm milk, then mash until smooth and fluffy. Season with salt and pepper to taste. Set aside.

2. Cook the filling

In a large skillet or sauté pan, heat olive oil over medium heat. Sauté the chopped onion for 3–4 minutes until soft, then add garlic and cook for another minute.

Add the ground meat and cook until browned, breaking it up with a spoon.

Stir in tomato paste, Worcestershire sauce, thyme, and beef broth. Let it simmer for 5–7 minutes until thickened.

Add peas and carrots, then season with salt and pepper. Remove from heat.

3. Assemble the pie

Preheat your oven to 400°F (200°C). Spoon the meat mixture into a baking dish and spread evenly.

Gently spoon mashed potatoes over the meat and smooth with a spatula. Use a fork to create texture on top (helps with browning). Optionally, sprinkle with cheddar cheese.

4. Bake

Place the dish on a baking sheet and bake for 20–25 minutes until the top is golden and slightly crispy.

Broil for the last 2–3 minutes if you want a more browned crust. Let it cool for a few minutes before serving.
