Ingredients

For the Filet Mignon:

  • 2 (6-8 oz) filet mignon steaks
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika

For the Shrimp:

  • 6-8 large shrimp, peeled and deveined
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp lemon juice

For the Lobster Cream Sauce:

  • 1/2 cup cooked lobster meat, chopped
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup seafood stock (or chicken broth)
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

1. Prepare the Filets

Remove the filet mignon steaks from the fridge and allow them to come to room temperature for about 30 minutes. This helps them cook evenly. Pat them dry with paper towels and season generously with salt, black pepper, garlic powder, and smoked paprika.

2. Sear the Filets

Heat a cast-iron skillet over medium-high heat. Add olive oil and butter, then sear the steaks for 3-4 minutes per side, creating a beautiful crust. Reduce heat to medium, and continue cooking for 2-3 more minutes per side for medium-rare (or longer for your desired doneness). Remove from the skillet, tent with foil, and let the steaks rest for at least 5 minutes.

3. Cook the Shrimp

In the same skillet, melt 1 tbsp butter over medium heat. Add the shrimp, season with salt, black pepper, and red pepper flakes, and cook for 1-2 minutes per side until they turn pink and opaque. Squeeze lemon juice over the shrimp and set aside.

4. Make the Lobster Cream Sauce

In a clean saucepan, melt 1 tbsp butter over medium heat. Add garlic and sauté for 30 seconds until fragrant. Pour in the white wine and let it reduce by half, about 2 minutes.

Add the heavy cream, seafood stock, smoked paprika, and cayenne pepper (if using). Bring to a gentle simmer and let cook for 3-4 minutes until it begins to thicken. Stir in the grated Parmesan cheese, followed by the chopped lobster meat. Simmer for 2 more minutes, adjusting seasoning with salt and black pepper as needed.

5. Assemble and Serve

Place the filet mignon steaks on a serving plate, then top each with shrimp. Spoon the lobster cream sauce generously over the top, letting it cascade down the sides. Garnish with fresh parsley and serve immediately.

Cooking Tips & Notes

  • Use high-quality beef: Filet mignon is best when cooked to medium-rare (130-135°F), but adjust based on your preference. Use a meat thermometer for accuracy.
  • Don’t skip resting the steak: Resting the steak for at least 5 minutes after cooking allows the juices to redistribute, ensuring a juicy bite.
  • Choose large, fresh shrimp: If using frozen shrimp, make sure to thaw and pat them dry before cooking to prevent excess moisture in the pan.
  • Lobster alternatives: If fresh lobster meat isn’t available, imitation lobster or crab meat can work as substitutes.
  • Balance the sauce: If the cream sauce thickens too much, add a splash of seafood stock or white wine to loosen it up.

Serving Suggestions

  • Pair with a starch: Serve this dish with garlic mashed potatoes, buttered pasta, or creamy risotto to soak up the rich lobster cream sauce.
  • Add a vegetable: Roasted asparagus, sautéed green beans, or garlic butter Brussels sprouts make a perfect side.
  • Wine pairing: A buttery Chardonnay, Sauvignon Blanc, or a bold Cabernet Sauvignon pairs wonderfully with the steak and seafood flavors.
  • Make it a surf and turf feast: Serve alongside grilled scallops, lobster tail, or crab cakes for an extra-indulgent meal.

This Filet Mignon with Shrimp and Lobster Cream Sauce is a show-stopping dish that brings together the best of land and sea. Perfect for date nights, celebrations, or any time you want to treat yourself to an unforgettable meal!
